This turkey meatloaf is something I created my first time making meatloaf & it was delicious! I mean, the KIDS ate it for goodness sake! They had no idea is was super healthy and full of veggies! #winning! This recipe is simple, easy & can totally be customized to your liking!
Ingredients
2 lbs ground turkey
1/2 small yellow onion
1 medium carrot
1/2 medium zucchini
1/2 red bell pepper
1/2 cup breadcrumbs
2 eggs
1 tbsp garlic powder
1 tbsp salt & pepper
1 cup ketchup
1/2 brown sugar
Prep Time: 10 min Cook Time: 1 hour, 15 min Total Time: 1 hour, 25 min
Directions
Preheat the oven to 350 degrees. Take all the veggies & one at a time, chop them either in a food processor or by hand. In a large bowl, add the ground beef, all the chopped veggies, along with the rest of the ingredients & mix well with clean hands. On a foil-lined cooking pan, dump the meatloaf mix onto the pan and form an even loaf, however high or low you want it, I form mine low. Place in the oven for 1 hour. While that's in the oven, get out a small sauce pot & over medium/low heat, add the 1 cup of ketchup & 1/2 cup of brown sugar & heat until the brown sugar is disolved. When the timer goes off, open the oven and pour about 1/2 of the sauce over the top of the meatloaf, turn the oven up to 400 degrees & continue cooking for another 15 minutes, until meatloaf is nice and brown!
