I don't know about you but in my house veggies with every meal is a must. With this recipe I can make my veggies and protein in the same pan. SCORE! All I need to make is rice and I'm set. This is a super quick and easy weeknight meal that easily costs less than $15 SCORE x2 !!!!
-1 package of drumsticks
-1 red onion
-1 yellow onion
-2 green bell pepper
- Line your pan with foil. Slice your veggies and spread them across the bottom of the pan. Season lightly(I use Goya Adobo All Purpose Seasoning) .
- Remove the skin from drumsticks (optional) . Season liberally on both sides ( I used seasoning salt,onion powder, paprika, pepper, and poultry seasoning)
- Bake at 375° for 35-45min . Let stand for 10min and serve over rice
